Questo vino è stato dedicato a Fabivs de’ Vecchis, Vescovo di Montalcino, che nel 1672 dette inizio alla realizzazione del Palazzo Piccolomini. Il Fabivs nasce come uno dei primi vini in Montalcino prodotto esclusivamente da uve Syrah. Voluto fortemente da Giuseppe Bianchini, grande estimatore dei Syrah francesi.

terreni di medio impasto e galestro, di origine eocenica tra i 240 e i 360 metri s.l.m.

Vitigno:

100% Syrah; le barbatelle di origine francese sono state impiantate nel vigneto “Del Conte” dove hanno trovato un terroir ottimale ed un microclima particolarmente adatto.

Vinificazione, fermentazione ed affinamento:

In recipienti di acciaio inox e vasche di cemento vetrificate a temperatura controllata tramite camicie di raffreddamento e piastre ad immersione.

Invecchiamento:

In botticelle di rovere da 3hl

Rosso rubino intenso

Caratteristiche Organolettiche:

Complesso, intenso e persistente; importanti note di mora, prugna e ciliegia trovano un eccellente connubio con le speziature cedute dal legno di rovere delle piccole botti utilizzate. Al gusto è caldo, equilibrato, estremamente morbido e persistente. Vino di grande struttura e corpo che esprime delicatezza e grande personalità.

Servizio:

18°C, stappare un’ora prima della mescita e servire in calice di cristallo a forma "ballon". Le bottiglie vanno conservate al buio, distese al fresco e senza sbalzi di temperatura.

Abbinamento gastronomico:

Vino da occasioni importanti che ben si abbina a secondi piatti particolarmente strutturati e formaggi stagionati. Molto interessante l’ abbinamento con dessert a base di cioccolato fondente.

Proprietor Paolo Bianchini is upbeat about his 2003 Brunellos. It is the first vintage in which he had the tools to perform a cold soak, which he feels was especially critical in preserving as much freshness as possible in the wines. For the Brunellos, fermentation and maceration lasted several weeks and the wines were aged in cask."

Complesso, intenso e persistente; importanti note di mora, prugna e ciliegia trovano un eccellente connubio con le speziature cedute dal legno di rovere delle piccole botti utilizzate. Al gusto è caldo, equilibrato, estremamente morbido e persistente. Vino di grande struttura e corpo che esprime delicatezza e grande personalità.

Servizio:

18°C, stappare un’ora prima della mescita e servire in calice di cristallo a forma "ballon". Le bottiglie vanno conservate al buio, distese al fresco e senza sbalzi di temperatura.

Proprietor Paolo Bianchini is upbeat about his 2003 Brunellos. It is the first vintage in which he had the tools to perform a cold soak, which he feels was especially critical in preserving as much freshness as possible in the wines. For the Brunellos, fermentation and maceration lasted several weeks and the wines were aged in cask."

Questo vino è stato dedicato a Fabivs de’ Vecchis, Vescovo di Montalcino, che nel 1672 dette inizio alla realizzazione del Palazzo Piccolomini. In recipienti di acciaio inox e vasche di cemento vetrificate a temperatura controllata tramite camicie di raffreddamento e piastre ad immersione.

Complesso, intenso e persistente; importanti note di mora, prugna e ciliegia trovano un eccellente connubio con le speziature cedute dal legno di rovere delle piccole botti utilizzate. Al gusto è caldo, equilibrato, estremamente morbido e persistente. Vino di grande struttura e corpo che esprime delicatezza e grande personalità.

18°C, stappare un’ora prima della mescita e servire in calice di cristallo a forma "ballon". Le bottiglie vanno conservate al buio, distese al fresco e senza sbalzi di temperatura.
